Chocolate Covered Frozen Raspberries

Has anyone else become addicted to TruFru frozen raspberries like I have??? I decided to try a copy cat version and make them myself. These are perfect to pop a couple as a little treat when you are craving something chocolatey....which for me is quite often! ;). A couple of these berries is much, much better than caving in to a few Oreos, a bowl of ice cream, or a candy bar! Plus, you get a teeny tiny serving of fruit too. Win-win in my book!

RECIPE:

  • 28 fresh raspberries

  • 1/3 cup vanilla yogurt

  • 1/2 cup chocolate chips, I like dark!

  • 2 teaspoons coconut oil

  1. Rinse raspberries and pat them dry with a paper towel. Sit out to dry a bit because they dip in the yogurt best if they are completely dry!

  2. Cover a small baking sheet or flat baking dish with parchment paper.

  3. Using your fingers or a toothpick, dip each raspberry into the yogurt to coat. Place each yogurt covered raspberry onto the parchment. Once all the raspberries are coated, place in the freezer for 30-60 minutes to let the yogurt harden.

  4. Once the yogurt has hardened up, melt chocolate chips with coconut oil in the microwave on 30 second intervals, until melted and thin enough to dip or drizzle.

  5. Dip each yogurt covered raspberry into the melted chocolate and place back on the parchment lined sheet. Continue with remaining berries until they're all coated. Place back in the freezer until chocolate has set.

ENJOY!!!!
