Chocolate Peanut Butter Protein Balls

My favorite protein cookies! These delicious little balls are perfect as a bedtime snack when you are craving something sweet, or as a pre or post workout snack when you are running on empty. Bonus - my kids love these too! Warning -- just because these are "healthy" and a good source of protein, doesn't mean they are a free for all! ;-) Portion yourself off to one, maybe two balls, because these little guys are so good you'll want to eat more!



INGREDIENTS:

1/3 cup honey

1/2 cup almond milk

3-4 TBSP cacao powder..depending on how much chocolate flavor you like!

1/2 cup all natural peanut or nut butter.

3TBSP of flax seeds (optional)

1/4 cup plain shredded coconut (optional)

3 cups oats

1-2 scoops protein powder(depends on the serving size of your protein..chocolate or vanilla)


Directions:

Heat honey, almond milk, cacao powder in a saucepan over medium heat, stirring occasionally until it comes to a boil. Take off heat & immediately Add in peanut butter, oats, flax seed, coconut flakes, & protein powder & stir until well mixed.

Roll into cookies! Place in a container & refrigerate.
